Honey BBQ Chicken
2 large sweet potatoes, peeled and sliced
1 can of pineapple chunks in juice
1/2 cup of chicken broth
1/4 cup of finely chopped onion
1/2 tsp of dry ginger
1/3 cup of BBQ sauce
2 tbsp of honey
1/2 tsp of dry mustard
5 chicken leg quarters, without skin
Place sweet potatoes, pineapple with juice, chicken broth, chopped onion, and dry ginger into crockpot; blend well. In a seperate bowl, combine BBQ sauce, honey, and dry mustard; blend well. Coat chicken legs (on all sides) with BBQ sauce mixture. Place chicken in single layer over sweet potato and pineapple mixture.
Cook on LOW for 7 to 9 hours.
