Honey Orange and Apple Nut Bread Pudding
Ingredients: 2 cups of all purpose flour 1/2 cup of walnuts 2/3 cup plus ¼ cup of sugar 1 ½ cups of orange juice 3 tsp of baking powder 1/2 cup of honey A pinch of salt 1 tbsp of melted butter 8 tbsp of butter cut into cubes 1 1/3 cup of sour cream 1 cup of milk 4 tbsp of powdered sugar 2 medium Granny Smith apples that are peeled and cut into cubes 1 tsp of cinnamon Directions: Lightly grease the inside of the crockpot. In a mixing bowl mix the flour, the 2/3 cups sugar, the baking powder and salt. Add the cubed butter and mix until it resembles coarse meal. Stir in the milk to form a stiff dough. Spread the dough into the bottom of the crockpot. Sprinkle the apples and walnuts over the dough but be sure not to stir it. In another mixing bowl, combine the orange juice, honey, 1/4-cup of sugar, the melted butter and cinnamon. Pour over the apple mixture and again do not stir. Cover and cook on high for 2 to 3 hours or until the apples are tender. For this dessert, do not cook it on low. In a small bowl, whip the sour cream and powdered sugar. Serve warm with dollops of the sour cream mixture.
