Crock Pot Swedish Meatballs




Ingredients:
1 1/2 lbs of ground chuck
1/2 lb lean ground pork
1 1/2 cups of fresh bread crumbs
2 eggs
3/4 tsp of salt
1/8 tsp of pepper
2 tbsp of flour
1 cup of milk
1 medium onion chopped finely
1/8 tsp of nutmeg
10 1/2 ounces of beef consommé
2 tbsp of melted butter
1/4 tsp of allspice
OPTIONAL - 1/8 tsp of cardamom

Directions:

Soak bread crumbs in milk for 5 minutes in a large mixing bowl. Add beef, pork, eggs, onion, salt, allspice, nutmeg and cardamom. Mix well. Shape into small 1-inch balls. Place on broiler pan and bake for 15 minutes at 400 degrees. Put browned meatballs in crock pot. Add 1/2 can beef consommé, pepper. Cover and cook on LOW for 4-6 hours OR HIGH for 2-3 hours.

Combine butter and flour to make a smooth paste. Add paste to remaining 1/2 can of consommé and pour into crock pot. Cook until thickened which is about 45 minutes.
